  • Author: Julien Moreau
  • Total Time: 1 hour 15 minutes

Ingredients

– 4 bone-in pork chops
– 4 cups thinly sliced potatoes (Yukon Gold or Russet)
– 1 large onion, thinly sliced
– 3 cups heavy cream
– 2 cups shredded cheddar cheese
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 1 teaspoon paprika
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– Fresh parsley, for garnish (optional)

Instructions

To create your Smothered Pork Chop and Scalloped Potato Casserole, follow these simple steps:

1. Preheat the Oven: Set your oven to 375°F (190°C).

2. Brown the Pork Chops: In a large skillet, heat olive oil over medium-high heat. Season pork chops with salt, pepper, and paprika. Sear each chop for 4-5 minutes on each side until browned. Remove from the skillet and set aside.

3. Sauté Onions and Garlic: In the same skillet, add sliced onions and garlic. Cook for about 3-4 minutes until they become translucent.

4. Prepare the Cream Mixture: In a large bowl, mix heavy cream with salt and pepper. Add half of the cheddar cheese and stir to combine.

5. Layer the Ingredients: In a greased casserole dish, layer half of the sliced potatoes at the bottom. Add half of the sautéed onions and garlic over the potatoes. Pour half of the cream mixture over this layer.

6. Add Pork Chops: Place browned pork chops on top of the first layer.

7. Repeat Layering: Add the remaining sliced potatoes, followed by the remaining onions and garlic. Finish with the leftover cream mixture on top.

8. Cover with Cheese: Sprinkle the remaining cheddar cheese evenly over the top layer.

9. Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden brown.

10. Rest Before Serving: Allow casserole to cool for about 10 minutes before serving to let the layers set.
